Healthy Pancakes

A lot of people would think that pancakes with cottage cheese in them would be gross. But they aren't. On the contrary, they're the best pancakes we've had. My Gramma introduced us to these.

Ingredients

  • 3/4 cup Whole-Wheat Flour
  • 3/4 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 1/2 tbsp Granulated Sugar
  • 2 Eggs
  • 1 1/2 cups skim Milk
  • 1/4 cup Cottage Cheese
  • 1/2 tsp Vanilla
  • 1/4 cup frozen Blueberries

Instructions

  1. In a big bowl whisk together eggs, milk, cottage cheese, and vanilla.
  2. Add tne flours, baking powder, baking soda, and sugar.
  3. Stir just until dry mixture is wet.
  4. Gently stir in blueberries (if you over stir, they will turn purple!)
  5. Cook in a butter skillet until bubbles on surface break, then flip
  6. Lift out of pan with spatula. Place on plate and serve.

These are great with fruit yogurt and cinnamon on top, or maple or pancake syrup. If you are adventurous, sprinkle with chocolate chips, or jam.
